Hi,
I want to type, say, 20201008 into a cell and as soon as I press the enter or tab keys
have "Excel for mac 2016" immediately convert that entry to 2020-10-08.

I don't want to have another column set up that uses a formula to convert
20201008 to 2020-10-08.

I want Excel to do the conversion in the background as soon as I finish press
the enter or tab key after entering 2020-10-08.

Anyone got a way to do this?

Unless there is something very unusual about Excel 2016 on a Mac this is a standard formatting option. I assume you are using or inflicted with the ribbon interface in this version.
 
In the 'Home' screen slide along the ribbon towards the right and you will see a button 'Format'. Click on the drop down arrow and choose the bottom entry in the iist, 'Format cells'. In the dialoogue box you will see 'Date' about half way down the list. The format yyyy-mm-dd is one of the standard options inthe 'Date' selection box.
 
You will of course have to select the cells you wish this formating to apply to before you select that option, or any other.
